Broccoli is by far one of the most nutritious and most versatile vegetables nature has given us. You can boil, steam it, sauté it, bake it and even fry it! Perhaps though the most amazing features of this tasty vegetable are its myriad of health benefits. Broccoli contains over ten different vitamins and minerals and contains 450mg of omega 3 fatty acids per a two cup serving which helps aid in the fight again inflammation and reduce the incidence of heart disease .
Recent studies have been shown that consuming just 3 cups of broccoli daily can help prevent certain types of cancer. This is made possible not just by its high flavanol content, the antioxidant enzymes that give fruits and vegetables their rich colors but by its high concentration of a compound known as Sulforaphane. Sulforaphane is an enzyme that becomes active when crucifous vegetables including broccoli, cauliflower, kale, spinach, bok choy and cabbage are broken down. New research suggests that the anti-inflammatory benefits of Sulfurophane can help reduce the risks of certain cancers including prostate cancer, oral cancer and lung cancer.
Sulfuraphane , Alzheimer’s disease and stroke - Emerging research suggests that eating broccoli can reduce the risk of stroke and Alzheimer’s by inhibiting the product of a compound known as the phase 2 enzyme, this is more commonly known as Glutathione. Glutahione decreases the inflammatory markers interleukin-6 and certain cytokines that can lead to certain neurological distress.
