THE SULFORAPHANE MIRACLE ( OR THE AMAZING BENEFITS OF BROCCOLI! )

Broccoli is by far one of the most nutritious and most versatile vegetables nature has given us.  You can boil, steam it, sauté it, bake it and even fry it! Perhaps though the most amazing features of this tasty vegetable are its myriad of health benefits. Recent studies have been shown that consuming just 3 cups of broccoli daily can help prevent certain types of cancer. This is made possible not just by its high flavanol content, the antioxidant enzymes that give fruits and vegetables their rich colors but by its high concentration of a compound known as Sulforaphane. Sulforaphane is an enzyme that becomes active when crucifous vegetables including broccoli, cauliflower, kale, spinach, bok choy and cabbage are broken down.
